If you are going after complex tastes, Penne con Scalogno is your pasta. While using a very traditional penne style, it all comes to the sauce. Depending on the available sizes, we are using shallots or pearl onions for this pasta. Onions are cooked in balsamic vinegar of Modeno, then paired with local cheese of Erzincan, Eastern Turkey which gets matured in the animal skin. In addition to the onions and cheese, you will realise the crunchy pieces of walnuts while you enjoy your meal.
